The Certificate II is designed to provide trainees with skills and knowledge to enable them to work under limited supervision as a production operator in a food processing factory. Certificate III is designed to provide trainees with the skills and knowledge to enable them to work as an advanced operator or team leader/leading hand in a food processing company. At Certificate III level trainees may not have direct responsibility for others, but are expected to provide a role model for others in the work area.

NMIT (Northern Melbourne Institute of TAFE) is the biggest provider of training to the agriculture sector with courses delivered from the Epping Campus located on Melbourne's northern rural fringe. Epping Campus is home to award winning cattle, welding workshops, a forklift training area and glass houses for herb production. It also hosts one of Victoria's few indoor recirculating aquaculture facilities. Nearby are three of NMIT's impressive specialist training centres, the Northern Lodge farm at Yan Yean; Northern Lodge Eden Park, a 60 hectare horse stud; and the Growling Frog Vineyard.
Currently under construction is the Green Skills Centre of Excellence Training Centre, with $9.5million funding for the project provided from the Training Infrastructure Investment for Tomorrow (TIIFT) program as part of the Federal Government’s Teaching and Learning Capital Fund (TLCF) for Vocational Education and Training (VET).
