This course will give students a clear pathway including the practical and theoretical components, a business plan, branding, product coupling, marketing techniques and product development. The aim of this course is to provide clear distinctions for those wanting to enter the retail and wholesale sector of gelato and granita (Italian ice). Students will learn the principle foundations in production methods that include pasteurisation, working with balanced formulas, batch freezing; overrun flavouring pastes, inclusions and freezing methods post production. As well as demonstrations there will be hands-on practical training designed to simulate the experience of working in their own kitchen, with the products and manufacturing equipment.
