This course is for people working or intending to work in food preparation in a hospitality, community food service or health area. You will learn how to apply and maintain hygiene practices in a variety of food preparation areas. You will become familiar with the government Acts and Regulations relevant to food safety. You will also learn how to minimise food spoilage and food poisoning, apply sound food hygiene and food safety practices and use correct clearing, sanitising, pest control and garbage disposal procedures. You will also be able to implement a food safety program based on HACCP (Hazard Analysis Critical Control Point) principles.

Leeton is situated in the Murrumbidgee Irrigation Area (MIA) in the Riverina region of Southern New South Wales. The area is the heartland of one of the richest food producing areas of Australia, in particular rice, and has extensive value adding industries that enhance the food producing capacity of the area.
Leeton Campus is a hub for Engineering and Electrical Trades and Technology training, and also offers specialist training in Civil Engineering.
