Unfortunately the Certificate II in Food Processing is only offered via a traineeship and is not delivered on campus.
 
I can suggest two paths you might consider: a Certificate II in Kitchen Operations which will give you an overview of food preparation techniques, nutrition and hygiene (this is effectively a pre-entry to commercial cookery but would cover some of the basics you are looking for); or if you were to go another path you might consider some laboratory operations qualification such as Certificate III in Laboratory Operations.
